We are Making a Mild Salsa Borracha
Mexico has a nearly infinite number of unique salsas. One type of salsa you may not have tried before is a "salsa borracha," which is any salsa prepared with an alcohol base. The name translates as "drunk salsa" or "drunken salsa" but what it really means is delicious. The salsa is prepared with pasilla chiles and a light Mexican lager beer as the base.
Learn to Use Dried Chiles
Pasilla chiles are a mild to moderately hot chile pepper that have a fruity, sweet smell, a bit like raisins with a meaty texture that thickens salsas, sauces, and stews very well. If you have never cooked with dried chiles this is your chance to learn some new techniques and get some hands-on experience.

Our cook-alongs are a lot of fun and I guarantee you will learn something new. At the end of the cook-along you will have a few cups of great tasting salsa to use in the upcoming week and you will have some new techniques for making salsa any time you like.

Before the Cook-Along
If you want to cook along with us, gather the following before we start.
Ingredients
10 pasilla chili peppers
1 Mexican lager beer
1 bunch cilantro
1 medium white onion
5 Roma tomatoes
2 oranges
3 cloves garlic
1 tsp. oregano
1/2 tsp. salt + salt to taste
Tools
Kitchen knife
Cutting board
Blender
1 large frying pan or skillet used to pan roast the vegetables
1 Medium pot used to prepare the pasilla chiles
Spoons
Kitchen towels
Serving bowl for the salsa
