We will be hosting a joint cook-along session with
and from Stress-free Spanglish onMary and Bianca are two talented language teachers who will working with us in a mix of English, Spanish and Spanglish. It’s a fun, low-stress way to practice your language skills, learn some kitchen Spanish and learn a new taco recipe to boot.

Dish description 🌮 Chunks of asadero cheese softened in a spicy roasted green salsa served on warm corn tortillas. Asadero cheese is a melting cheese commonly used to make quesadillas. It’s very popular in the states of Durango, Aguascalientes, Jalisco, and Guanajuato.

Prepping for the Cook-Along
If you want to cook along with us, gather the following before we start.
Ingredients
1 1/2 lb. asadero, Oaxaca, or panela cheese (In a pinch, you can use mozzarella too.)
1 lb. tomatillos
1 to 4 serrano chiles
¼ medium white onion
1 clove garlic
¼ teaspoon whole cumin
3 fresh epazote leaves or 1 teaspoon dried (optional)
6 sprigs fresh cilantro
½ cup water
2 tablespoons cooking oil
12 corn tortillas
1 teaspoon salt

Kitchen knife
Cutting board
Blender
1 large frying pan or skillet used to pan roast the vegetables
1 medium pot
Spoons
Kitchen towels
Serving bowls
